Crunchy Colors!

Here’s a yummy salad that kids can help to make. Some of the shredding and chopping should be done by an adult, but kids can help measure, mix and toss!


2 cups of shredded purple cabbage
1 1/2 cups of chopped raw kale–use young leaves
2 carrots, shredded with a potato peeler into ribbons
2 sliced scallions
2 Tablespoons of roasted sunflower seeds


1 Tablespoon each of:
• olive oil
• vinegar (apple cider. rice or sherry vinegar)
• whole grain prepared mustard
2 teaspoons of honey
salt & pepper to taste

Stir the dressing together to blend, and then gently pour it over the veggies. Toss them thoroughly so that everything is coated with the dressing. You can use tongs or two forks. Supervise your child, but let them have a little fun so they’ll be eager to try this colorful creation!
This slaw will keep a couple of days, covered in the refrigerator. Delicious, healthy and BEAUTIFUL!
